Recipes / Breakfast
Soft banana pancakes, a warming touch of cinnamon and a generous drizzle of Med Cuisine Date Syrup make this an easy breakfast worth slowing down for. Greek yoghurt keeps the pancakes tender, while the date syrup brings a rich caramel sweetness to every stack.
The Recipe
Ingredients
1 ripe banana
2 eggs
¼ cup Greek yoghurt
¼ cup milk
1 tsp vanilla
½ cup oat flour
1 tsp cinnamon
1 tsp baking powder
½ tsp baking soda
Pinch of salt
Med Cuisine Organic Silan Date Syrup, to taste
Butter, for cooking and serving
Method
Mix the wet ingredients. Mash the banana in a bowl, then whisk in the eggs, Greek yoghurt, milk and vanilla.
Combine the dry ingredients. In a separate bowl, mix together the oat flour, cinnamon, baking powder, baking soda and salt.
Make the batter. Add the dry ingredients to the wet mixture and stir until just combined.
Rest. Let the batter rest while you preheat a nonstick pan over medium heat.
Cook. Grease the pan with butter and cook the pancakes for 2 to 3 minutes per side, flipping when bubbles appear and the edges look set.
Serve. Stack the pancakes, drizzle generously with Med Cuisine Date Syrup and finish with a dusting of cinnamon.
🌿 Med Cuisine Tip: Wait until bubbles begin to appear and the edges look set before flipping your pancakes. This helps them hold their shape and gives each side an even golden finish.
Med Cuisine Organic Silan Date Syrup brings deep caramel sweetness and a gently fruity finish to the warm banana and cinnamon flavours in these pancakes. Drizzle to taste just before serving.
